Burrito Bowl With Chicken Carnitas

So today I decided to share with you one of my absolute FAVORITE and quite filling meal prep meals! Even Hunter loves this meal. Let me tell you all a little bit about my significant other! He is the absolute most unhealthy. He will eat anything and is honestly surprised at how well most of my meal preps are, but he is extremely unhealthy overall. It seems as though everything he cooks is coated in grease, wrapped in bacon, or packed full of cheeses. I love him, but if we ate the way he would like today in and out, we would both have high cholesterol and hypertension within 6 months. Ha Ha Ha So needless to say he is always wary of my meal prep meals, so when I know that there is one he says, "this is really really good" it is a good meal. If it meets his standards, I have done well.

So here is what you will need to make dinner for two:
1.25 Cup Cauliflower Rice (Precut unseasoned or buy cauliflower to make your own) 1.25 Cup Black Beans 1.25 Cup Sweet Corn 13 Ounces Boneless Chicken 4 Tablespoons Olive Oil 2 Teaspoons Cumin 1/2 Teaspoon Sea Salt or Himalayan Pink Salt 1 Teaspoon Fresh Ground Black Pepper 1 Tablespoon Dark Chilli Powder 1 Teaspoon Onion Powder 1 Teaspoon Garlic Powder 2 Teaspoons Oregano 1 Medium Yellow Onion (Chopped or Diced) 2 Cloves Elephant Garlic (Chopped) 1 Large Orange 2 Limes
Preheat Oven to 350 Degrees
Chicken Step One: Combine 2 Teaspoons Cumin, 1/2 Teaspoon Sea Salt or Himalayan Pink Salt, 1 Teaspoon Fresh Ground Black Pepper, 1 Tablespoon Dark Chilli Powder, 2 Teaspoons Oregano in a small bowl. Step Two: Rub mixture over chicken Step Three: Drizzle 2 tablespoons olive oil over chicken Step Four: Top chicken with diced onion and garlic Step Five: Quarter the limes and the orange. Squeeze juice over the meat distributing as evenly as possible, and place the fruit on top of meat. Step Six: Cover with tinfoil and cook for 30-45 minutes (depending upon your oven's strength). Step Seven: Shut off Oven. Shred chicken with two forks and place back in the oven to sit in juices for additional 20-30 minutes.
Cauliflower Rice: Step One: Place 2 tablespoons olive oil in frying pan. Step Two: Place cauliflower rice 1 teaspoon onion powder and 1 teaspoon garlic powder in the pan. Step Three: Sautee until cauliflower rice is desired texture. For softer rice cook longer for crunchier rice cook less time.
Black Beans: If from bag follow directions on the bag. If from can: Step One: Rinse beans thoroughly with warm water. Step Two: Transfer beans to a small pot. Step Three: Cover with a small amount of water. Bring to boil. Step Four: Drain beans
Corn: Step One: Rinse corn thoroughly with warm water. Step Two: Transfer corn to a small pot. Step Three: Cover with a small amount of water. Bring to boil. Step Four: Drain corn.
Place all ingredients in a bowl and enjoy! I usually eat 5 oz chicken, 1/2 cup black beans, 1/2 cup corn, and 1/2 cup of cauliflower rice. Hunter gets the rest! I hope you guys enjoy this meal as much as I do!
